All of our beef is 100% Grass Fed and Grass finished raised on Pasture year round.

Upper leg bone marrow is firmer and richer. 

Lower leg marrow is softer, creamier, and more gelatinous.

Uses

Fat can be seared in a pan or on the grill, or even made into your own tallow. Both make a delicious accompaniment to your steak. Tallow is an excellent cooking fat that can replace anything you typically use.
